I have not found suitable substitute for the eggs in this recipe. If you have found one that works, please let me know so I can pass the information along.
I have used the egg white replacements for this mix. They work well, just make sure you whip them enough.
Make sure you whip the egg whites enough to withstand the folding in of the flour mixture.
When baking, the cake may smoke. As long as the cake is not turning black, this is normal and nothing to worry about. Browning is fine, but don't let the cake turn black.
The smoke may smell bitter. Again, this is normal for the sugar replacements. The finished cake will taste great.
DO NOT undercook the cake. Sugar replacements take longer to cook. If you take the cake out too soon, it'll still be raw and taste bitter.
